It is that perfect sturdy cookie that sinks into the soft center of heaven, with old world sweet almond notes made completely nut free. These Italian staples are not only gluten free, but are also free from the top 8 allergens.
Italian Amaretti Mix
This mix bakes 18-20 cookies that are crunchy on the outside with chewy moist goodness on the inside.
These cookies can be topped as desired with dry ingredients. Some recommendations are dried fig, dark chocolate, seeds or dried cherries. This mix is of course free of the top 8 allergens, however if you can tolerate nuts you can top with the traditional sliced almonds, whole almond or pignoli.
Note: While mixing these cookies perform a magic trick. It will seem as though the dough won't bind together, but I promise if you keep folding the dough you will be amazed at the outcome. It truly is magical.
